


Our casual restaurant with two AA Rosettes… the laid-back Gilpin Spice has an open kitchen serving pan-Asian dishes inspired by countries along the spice trail – spanning the Philippines, the Indian sub-continent, Malaysia, Thailand, Indonesia, Japan and China. Ollie Bridgwater and his team at SOURCE introduce their first Lake District menu, working with local suppliers for seasonal, beautiful produce.

Though the aim is to create three very different restaurants, headed up by three very different chefs, they are working together whilst sharing the same vision, commitment, passion and values that are built on sustainable sourcing with low to no food miles and supporting local producers. Ollie Bridgwater (ex Fat Duck), Aakash Ohol (ex HRiSHi), and Tom Westerland aka ‘Westy’ (ex Lucknam Park) have begun to put their own stamp, creativity, and cooking techniques into practice whilst developing entirely new menus for their individual restaurants.
